Di Ridge lives on a sheep station with her husband Phillip, southwest of Bourke.
As drought and a wool recession took hold in 2001 , everyone was discovering other avenues of income and she wondered what her contribution could be. Di had made a salad dressing – a recipe that was given to her - which was much admired and her friends suggested she should make it commercially.
So after several sleepless nights pondering her ability to find the time, She produced her first batch - in Coca Cola bottles!
In the intervening years, although it is still personally handmade , the business has grown successfully with shop & mail order sales all over Australia.
I hope you enjoy your homemade Poppy Seed Salad Dressing from Bourke NSW.
